Healthy Coleslaw Recipe

Ingredients:

This incredible healthy recipe uses fresh ingredients to create a crunchy, bright coleslaw
without mayo or sugar. You’ll need:

  • Red cabbage: half of a small cabbage
  • Carrots: 4-5 carrots
  • Olive oil
  • Apple cider vinegar
  • Lemon or Lemon Juice
  • Garlic: 2 cloves
  • Salt & pepper: to bring all of the flavours together
  • Extras: pumpkin seeds or sunflower seeds

 

Method:

  1. Shred the cabbage and carrots in a food processor
  2. In a mixing bowl, add ¼ cup of olive oil, 1/8th cup apple cider vinegar, 2 cloves of minced garlic, a splash of lemon juice and whisk to combine
  3. Pour the dressing over the coleslaw and toss well to combine. Taste and adjust seasoning as needed.
